These are the poultry shears design by French cutlery experts Déglon, inspired by four generations of craftmanship. Sought by chefs both in France and across the globe, these shears are an essential piece of kitchen equipment for spatchcocking a chicken by removing its backbone, clipping wing tips to prevent burning, or trimming fat before roasting. The 3 3/4" full-tang stainless steel (2Cr13) blades are made with a 50 hardness rating and are mounted to the pressed wood handles by three stainless steel rivets; a locking clasp keeps the shears closed during storage. 10" L. (9 oz.)
