The Iconic Cafe du Monde Beignet Mix

This is the beignet mix from New Orleans’ iconic Café du Monde Coffee Stand that may be prepared in one's own kitchen for a taste of the Big Easy without boarding an airplane. Since 1862, the legendary shop has been serving its three iconic warm pastries accompanied by full-bodied café au lait flavored with chicory. Two 28-oz. boxes. Coffee sold separately.
- Store in a cool, dry place.
- Keep refrigerated after opening.
- Makes 48 beignets per box.
- Mix-in bowl 2 cups mix and 7 fl oz water. Stir with spoon until blended.
- Roll to 1/8 thickness on floured surface, using flour liberally on dough
- Cut into 2-1/4 squares. Makes about 2 dozen.
- Fry in an inch or two of oil at 370 degrees basting continually on each side until puffy and light golden. Drain well. (Oil should be hot enough for dough to pop to surface in 8-10 seconds.) Electric skillet works best.
- Sprinkle generously with powdered sugar.
